Yesterday we spent the majority of the day traipsing along ditchbanks around the valley hunting for the elusive wild asparagus. It's SOOOooooo good, and it grows EVERYWHERE in spring. Usually we look for it around Eastertime, but this year, Mother's Day seems like the weekend to find it!

Here's my little one, Will, with part of our harvest:

YUM!!! Do any of you harvest wild asparagus?

XOXO, Libbie

I will sure take you up on that LIbbie!!!!
I am hoping to make it down your way maybe next week some time...once pageant is over...I have a little something for you...nothing stupendous..but it is an excuse to come down and that is good enough for me..haha

Yeah, Jenny - we have to be really crafty, because our spot is in plain sight of the road - William last year wanted to transplant some tall grasses from behind it to the front, so it would be hidden better. We did that, and this spring, we almost couldn't find it ourselves! The hardest thing about asparagus is quitting the harvest. I think I could eat it all year long. AND, if you come down next spring, Jenny, I'll share my spot! Only, of course, because you're an hour and a half away!!!

Libbie..I am so jealous...I search and search around here and the oldtimers beat me to it I think. NO ONE will share their spot (I honestly don't blame them) I love asparagus!! Some day I will have to plant some but I am not going to give up on someday finding my own wild patch!!! Lucky you...and those cutie pies!!

Oh, Jen - I HIGHLY recommend it. Your mom is SO lucky! I would love to have some here - but I'll take the ditchbanks - the "no care" garden! Wild asparagus really makes "store" asparagus not so good. In fact, Will (above) will just munch on the wild stuff raw, but when I bought some yesterday because we couldn't find any around, he tried some and told me I should cook it - it doesn't taste like the other ones do.

I remember you talking about this last year, Libbie - the ditchbank asparagus! That is really neat. I love asparagus. My mom was wanting to plant some at her new farm this year, but then she found a patch growing right behind her house - what luck, huh? She cut it back & is hoping to get a second harvest, so I need to go get some!
